La rugămintea fiicei mele am făcut acest tofu la air fryer, marinat în prealabil cu marinadă în stil asiatic. Fiica mea este mare amatoare de preparate asiatice și, implicit, de tofu. Tofu este un preparat din soia, asemănător cu brânza. Unii îi spun „brânză telemea vegană” deși asemănările cu brânza sunt pur estetice și, parțial ca textură… tofu neavând gustul și aromele ei. Este un produs cu gust neutru care trebuie „ajutat” pentru a deveni savuros. De aceea tofu se marinează în prealabil: pentru a dobândi gust și arome din marinadă! Usturoiul, sosul de soia (soy sauce), sosul de stridii (oyster sauce) și uleiul de susan (sesame oil) contribuie din plin la aromele și gustul acestui preparat. Toate aceste ingrediente asiatice se găsesc în majoritatea supermarketurilor.
Sosul de stridii poate fi înlocuit cu sos de soia și un pic de miere – pentru cei ce țin post și vegani.
Noi am ales să-l și glazurăm (după prăjire) cu o dulceață picantă de ardei și bine am făcut!

Ingrediente pentru „brânză vegană” sau tofu marinat
Am scurs tofu de saramură și am pregătit ingredientele marinadei asiatice: sosul de soia, usturoiul, sosul de stridii, lămâia, harissa pudră (poate fi și pastă) și uleiurile (de floarea soarelui și de susan).
Cum se scurge și presează tofu înainte de gătire?
Am tăiat tofu în 8 cuburi mari. Pentru a permite pătrunderea marinadei în interiorul acestora trebuie, în prealabil, să se scurgem și stoarcem bine de saramura în care au stat în cutie.
Am așternut strat dublu de șervete de bucătărie pe un tocător, am pus cuburile de tofu (cu distanță între ele) și le-am acoperit cu alte șervete puse dublu.
Am improvizat o presă din mai multe tocătoare (grele) puse unele peste altele, așezate peste cuburile de tofu. Ele vor ajuta la eliminarea lichidului din tofu. Le-am lăsat așa 15-20 de minute.
Marinarea cuburilor de tofu în stil asiatic cu sos de soia, sos de stridii, usturoi, miere etc
Între timp m-am ocupat de marinada asiatică. Practic am amestecat toate ingredientele într-un bol. Nu am uitat de coaja rasă de lămâie și de usturoiul zdrobit. În final am pus uleiurile (de floarea soarelui și de susan). Aveți grijă cu cel de susan deoarece este extrem de aromat! Marinada obținută este foarte faină! Are textură mai groasă grație sosului de stridii (care este și dulceag), iar aromele ei de usturoi, de lămâie și de sos de soia sunt perfecte! De sare nu este nevoie deorece sosul de soia este destul de sărat.
Am scos cuburile de tofu din presa improvizată și le-am pus în bolul cu marinadă. Le-am amestecat cu grijă ca să fie bine cuprinse de ea. Ele pot sta la marinat 2-3 ore la temperatura camerei sau 10-12 ore la frigider (peste noapte). E nevoie de timp pentru ca marinada să pătrundă în tofu și să-i dea „vlagă”.
Câte minute și la ce temperatură se rumenește tofu la air fryer sau friteuză cu aer cald?
Am testat mai multe branduri de air fryer (friteuze cu aer cald, fără ulei) și am decis că cel de laCosorieste „tata lor”! Eu am de peste 1 anacest modelși-l folosesc intensiv. Pe lângă capacitatea mare a coșului (5,5 L – în care gatesc 4 porții de mâncare!), randamentul acestui air fryer este admirabil: rumenește cu adevarat, nu doar înăbușă!Și toate acestea cu foarte puțin ulei și în timp foarte scurt, de câteva minute!În ziua de azi, la costurile actuale ale energiei, nu merită să încingi cuptorul mare electric! Cosori este, practic, un mini cuptor electric eficient, cu consum mult mai mic și cu timp mai scurt de gătire. Găsiți și alte mărci de air fryeraici(la diferite prețuri).
Am preîncis air fryer-ul 5 minute la 205 C. Am scos apoi coșulețul și l-am uns repede cu puțin ulei de floarea soarelui (cu pensula). Am aranjat cuburile de tofu marinat în coșuleț, cu spațiu între ele. Marinada rămasă se poate folosi la glazurarea lor după prăjire sau pe post de dip (sos).
Am închis sertarul friteuzei cu aer cald și am setat prima etapă de coacere: 7 minute la 190 C. După expirarea timpului am verificat stadiul de rumenire al cuburilor de tofu și am continuat prăjirea lor pentru 5 minute la 180 C.
Gata! Tare bine miroase în bucătărie! Am scos cuburile de tofu prăjite și le-am pensulat iar cu un pic din marinada rămasă.
Cum se coace tofu la cuptor?
Dacă nu aveți friteuză cu aer cald (air fryer) atunci preîncingeț cuptorul la 190 C cu ventilație (căldură sus+jos) respectiv treapta aproape maximă la cele pe gaz. Așezați cuburile de tofu marinate într-o tavă mică așternută cu hârtie de copt și le coaceți 15-20 de minute sau până ce se rumenesc frumos.

Cât de bine arată aceste cuburi de tofu prăjite la air fryer! Sunt superb rumenite și extrem de gustoase! Le-am servit împreună cu o salată răcoritoare de castraveți cu ceapă și roșii. cu vinegretă simplă – rețeta aici. Ar merge perfect și un orez simplu fiert în apă cu sare.
Am pus peste cuburile de tofu prăjite un pic de dulceață de ardei iute și dulce – rețeta aici.
Dulceața aceasta picantă merge perfect cu tofu rumenit la air fryer! Cuburile de tofu au miez moale, foarte gustos și aromat de la marinada în care au stat înainte de prăjire.
Tot la air fryer am făcut recent niște creveți asiatici, în crustă de fulgi de cocos, serviți tot cu dulceață de ardei iute – rețeta aici.
Mai demult am făcut niște coaste de porc glazurate + cartofi copți (gătite deodată la air fryer) – rețeta aici. Au fost fantastice!
